Chardonnay

The chardonnay is straw yellow with slight gold tinges.

On the nose the wine is ripe and fruity, showing soft aromas of tropical fruits along side hints of melon and peach.

Palate:

On the palate the wine is soft and full with well balanced acidity and a smooth and dry finish.

Serving Suggestion:

Enjoy with all fish including Atlantic Salmon, Ocean Trout and Shellfish

Tasting Notes:

A traditional fruit driven style with ripe melon, peach and tropical aromas. The palate is soft and smooth with a well rounded dry finish. Fruit ripeness gives a good balance and length.

Sparkling Spumante

Colour:

The wine is light straw in colour with an attractive mousse.

Aroma:

The aroma is clean and fresh showing subtle scents of melon and citrus fruits.

Palate:

On the palate the wine is smooth and full, showing tropical fruits and well balanced acidity, accentuated by a fine effervescence.

Serving Suggestion:

Serve chilled with a simple yet exotic quail or spatchcock recipe.



Merlot

The 2005 Merlot has a ruby red colouring with light purple hues.

Aroma:

On the nose the wine has ripe aromas of berry fruits and plum balanced by subtle and soft spice.

Palate:

The palate is smooth and filling with abundant berry fruits and a tannin structure that is firm and lengthy.

Serving Suggestion:

Served at room temperature this young unoaked Merlot will be particularly good with your favourite pizza topped with herbs, onion and a mix of cheeses.

Tasting Notes:

The palate is full of ripe fruit flavours. Soft, subtle and juicy this wine displays fine tannins finishing with refreshing, balanced acidity.

Cabernet Sauvignon

Colour:

The Cabernet Sauvignon has a rich purple and red colouring.

Aroma:

The wine has varietal aromas featuring mulberries and crushed leaves along side some faint earthy characters.

Palate:

On the palate this wine is firm and long, boasting excellent tannin structure alongside ripe fruits with flavours of spices and chocolate.

Serving Suggestion:

Served at room temperature this young fruity Cabernet Sauvignon will flatter Roast Venison, Pepper Steak or rich meaty Lasagna.

Tasting Notes:

This wine has flavours of blackcurrant, mulberry and a cedar nose along with five spice and chocolate, creating a flavoursome wine.



Shiraz

The 2006 Shiraz has deep red coloration with abundant purple hues.

Aroma:

The wine features plentiful ripe aromas of blackberry and spice integrated amongst a slight drift of liquorice and chocolate.

Palate:

On the palate the wine provides ample mouth feel and ripe tannin, alongside the richness provided by the supple fruit and well balanced acidity.

Serving Suggestion:

Served at room temperature this fruity Shiraz is delicious with barbequed chicken wings or an aromatic red Thai curry.

Tasting Notes:

The cooler, relatively dry autumn weather provided excellent conditions for accumulation of concentrated, spicy fruit flavours in Shiraz grapes.
